Fennel and Citrus Salad with Mint
serves 4
Ingredients
- 2 ea red grapefruits, peeled, cleaned, and sectioned
- 2 ea navel oranges, peeled, cleaned, and sectioned
- 3 T mixed grapefruit and orange juice
- 2 T olive oil
- 1 T honey
- 1 T lemon juice
- 2 ea fennel bulbs, sliced
- 2 T fennel fronds, chopped
- 2 T mint leaves
- 1/2 t ground coriander
Instructions
- Whisk together the olive oil, honey, lemon juice, and 3 T of citrus juice. Season to taste.
- Toss with the fennel and citrus sections.
- Plate, garnish with the fennel fronds, mint leaves and ground coriander, and serve chilled.
